Ageing sushi

After missing out, I had the chance to go visit the much rumoured sushi restaurant, at last! The often talked about ageing (ripen) sushi.​ ​

Tastier than you would imagine.

It depending on what fish it is, but it seems possible to ripen fish for 100 days. In pursuit of food, how far do you go?

 

Like squid liver that tastes like raw chocolate, or creamy ice cream?

 

3 week-old matured salmon roe glistens.

 

52 day-old tuna is still looks fresh. Although in a way strange, it had the faint taste of coffee.
