'Amass'
It’s been 10-odd years since coming to Europe. The annual self-indulgent trip with Ishikawa from Marka.
Copenhagen has became somewhat fashionable … there are also bike lanes exclusively for cycling, and you see a lot of people riding their bikes dressed in neutral coloured outdoor wear. Somehow the atmosphere is more Kinfolk-like than Portland. I’m looking forward to having a good look around from tomorrow!
For now it’s our first evening meal at Naoyuki Honda’s recommendation, 'Amass'. The American owner chef is originally from ‘Noma’. And based in a redeveloped area beside the harbour, the setting is most certainly stylish.
We were given a 6-dish course, but the taste was more than I had expected. Simple and sturdy flavours not dependant on the beauty of presentation alone. The sauce is rich and packed full of flavour. And the vegetables own flavours are triggered without tasting bitter, and are superb.
Potato bread is eaten with our own fingers. Is is asparagus or fruit, The more I think about freshness I wonder is this asparagus or fruit? The depth of flavour of the sauce is amazing, and tailored to the sea lettuce. Theres no real sense in eating vegetables all the time. The main dish of pork grilled over charcoal is delicious. Though it might be difficult for people that find vegetables and herbs hard to eat, all the dishes are really delicious and modern. It looks as if theres also a Japanese influence as well.
It feels comfortable without being over friendly. The view outside looks like a kitchen garden. Most of the vegetable would have probably come from here too. There are people siting there drinking tea.
A smooth start to the trip, it’s been a while Copenhagen.
