Is this restaurant not the best in the world? I think it is.
Revisiting Osteria Francescana, I’ve been 2 or 3 times since then, and was even more delicious.
There is no form of eccentric behaviour, and for that reason alone is simple and just elemental.
Material and cooking are completely integrated with one another.

I’ll never forget the taste of Ricotta cheese that I was asked to taste before cooking began in the back alley.

First, had the chance to see what happens behind the scenes.

From delicious juice, with the bitterness of lemon and some unknown spice.
Followed by beautiful looking cuisine. It was absolutely wonderful and never disappointing, and remained excited all the way through.

Lentils were like caviar.
Fois Gras was crunchy,
and Caesar salad, like a bed of roses.
