Sushi Bureun + GEM by moto
It’s my second time at Sushi Kimura.
And this time the gathering is for Naoyuki Honda’s nihonshu pairing. Marie Chiba, manager of ‘GEM by moto’ in Ebisu prepares the drinks. To begin with the degree of excitement was already high with Kimura’s sushi, and Marie’s hors d’oeuvre that came out just before, paired with sake on the spot to match the taste. It’s what makes the gathering so rare.
At times the combination is perfect. When garnished the dish is completely different. It’s claimed that by changing temperature and adding spice it brings out the flavour. Well, it was amazing. Choosing something along the lines of a branded and hot or a fully-flavoured noujun sake went one step beyond the normal pairing, and I suddenly became interested in sake again. I wonder if I’ll ever have another experience like it?
Also, I must go to ‘GEM by moto’ sometime soon.
