Tempura Niidome
I had the best tempura of my life.
I was invited by Mr. Kimura of Sushimura in Futako Tamagawa and headed to Nagoya just to eat this.
Niiru-san, your attitude toward food is similar to Kimura-san's. I'm looking in the same direction. Not doubting preconceived ideas is not inheriting tradition, but thinking about the best method using the technology of the time. As a result, a new tradition is born. It was an amazing experience.
The ginkgo nut that comes out at the beginning of the appetizer is an extraordinary finish. Muscat hidden under the mozuku seaweed is an exquisite match that makes you feel like a vegetable with the maximum sweetness rather than a fruit.
They were all great, but personally the red Manganji pepper was the biggest surprise. Skillfully fired, it tastes like dried fruit.
The conger eel is also fluffy. I asked for a kakiage rice bowl, but if I don't know when I can come next time, I will add tempura roses. I've exceeded my belly bread (laughs).
