Udon WEST
Udon waist. A business format that can hardly be called a family restaurant in Fukuoka for a long time. I don't even remember how delicious it is.
However, I have had many opportunities to go to Fukuoka recently. I think udon is getting better. Of course, udon in Fukuoka is "Udon Taira", but the waist is pretty good.
Fukuoka's udon noodles are famous for their softness, but they are not stretched noodles and have a high water content in the first place. You can see that by looking at "Udon Taira", but I keep beating udon and boiling it all the time. Therefore, while it is soft, there is a faint soft waist at the end. I felt like I was approaching it.
