Sushi Miyako
I received an invite to Akabane by a certain talented editor-in-chief.
The first half is like fine dining rather than sushi restaurant snacks. The seasonal taste of bamboo shoots, hanazanshō (Japanese pepper), and so on, are packed with lingering good flavour as well.
While the sushi that follows is authentic, fine work is performed at every turn, with special attention given to the temperature of fish. The texture of maguro (tuna) is most memorable.
This really is enjoyable.
Smoking is allowed in private rooms this time. It can’t be helped, given how people who’ve been coming here for years are in Akabane. And all don’t know each other.
Even allowing for all of these kind of things, it was wonderful. By pure coincidence, the editor and master were old friends. I want to come back again.
