It’s the people make the place. It’s made by customers coming there, but above all it’s made by the shop staff.
One day visiting Tokyo’s leading meishu bar ‘Akaoni’, the atmosphere seems different somehow. It seemed that the master who always looked after every one has quit. I listen to what he was doing right now and visited his new place.
‘Sōun’, a place that has been satisfying lovers of nihonshu in Setagaya for over 10 years, has started a new shop downstairs called ‘Shō’.​ ​
Looking at the elaborate menu and the arrangement of appetizers, I can see just how reliable the place is.
I love shioyaki iwashi (grilled sardines). Last time it was a large baked sardine when I was in ’Mikitō’ around Midorigaoka. The most effort is given to this sort of inexpensive fish and it’s an attitude that runs through every dish.
The simmering dashi soup dish is outstanding. A final slug of nihonsu polishes it all off. The izakaya is just right in a good way, and a new quality establishment.
