Kyoto is said to be a dashi soup stock culture, but the common flavour is surprisingly strong and powerful.
Also unique in Chinese cooking, for example, sweet and sour pork without vegetables is minimal and has evolved of it’s own accord. One theory is because it is convenient for people to eat before going out … it’s a theme worth exploring.
‘Taihō’ teriyaki donburi with kinshi tamago (shredded egg) is committed to flavour for those that want something honest. Kinshi tamago is strong and just about able to bring out the taste of Kyoto. (laugh) I really want to come and have look at night too.
