The third week of this special feature is all about “progressive eating experiences” picking up on ‘Sushi Kimura’ where the typical way of making sushi its turned on its head. Ageing white or blueback fish is difficult but in the hands of owner Koji Kimura, most of the flavour is drawn out transforming it into ‘jukusei sushi’. With fish thoroughly preparing beforehand, and the right amount of rice, rice vinegar, plum vinegar, and carefully selected sake … all flavours are tied and married together when eaten. His relentless passion and curiosity is the evolving culture of Japanese cuisine.
