Lunch is at Kohaku, and dinner is Chūya. Today is really pushing it.

A clear stew soup is in good form, and proves how connected they both are. Grilled almost crispy motsu (offal) is also tasty.

Tsukune (meat balls) is eaten squeezed into raw pepper. This style has already spread everywhere, but this is where it would have started. A furikake of shredded nori (seaweed) and sesame seeds is sprinkled in Kyushu izakaya on top of raw green pepper in the same way. It’s worth studying how similar they both are.
